5 Healthy Salad Recipes You Must Try

1. Watermelon Feta Salad

Ingredients

  • Watermelon - 700g
  • Onion – 1
  • A few Mint Leaves
  • Feta Cheese – 180g
  • Salt to Taste
  • Black Pepper to Taste
  • Extra Virgin Olive Oil

Procedure

  1. Cut watermelon into small pieces (scoops) and collect them into a bowl.
  2. Add finely chopped onion, mint leaves, and feta cheese to the watermelon.
  3. Sprinkle powdered black pepper and salt as per taste.
  4. Add a sufficient amount of extra virgin olive oil to the mixture.
  5. Do garnishing using mint leaves and feta cheese.

2. Tofu and Quinoa Salad

Ingredients

  • Water – Two Cups
  • Quinoa – One Cup
  • Finely Chopped Tomatoes – One Cup
  • Baked Smoked Tofu – 225g
  • Diced Red/Yellow Bell Pepper – One Cup
  • Garlic Cloves (Minced) – Two
  • Diced Cucumber – One Cup
  • Lemon Juice – Two Tsp
  • Mint Leaves
  • Extra Virgin Olive Oil – Three tbsp
  • Ground Pepper – ½ tsp
  • Salt to taste

Procedure

  1. In a saucepan of medium size, pour water and sprinkle some salt.
  2. Let it boil, and then add quinoa.
  3. Simmer the gas. Cover the saucepan, let it cook for 20 minutes or till the time the whole water gets absorbed.
  4. Let the quinoa come to normal temperature (give it 10 -15 minutes).
  5. Whisk minced garlic, salt, olive oil, pepper, and lemon juice in a separate bowl.
  6. In another large bowl, add smoked tofu, quinoa, mint leaves, bell peppers, tomatoes, and cucumber.
  7. Do garnishing using mint leaves.

3. Garden Pasta Salad

Ingredients

  • Whole Wheat Pasta – Two Cups
  • Low-Fat Plain Yogurt – ½ Cup
  • Mayonnaise – ½ Cup
  • Diced Yellow/Red Bell Peppers – One Cup
  • Halved Cherry Tomatoes – One Cup
  • Finely Chopped – One Onion
  • Grated Carrots – ½ Cup
  • Extra Virgin Olive Oil – Two tbsp
  • Olives – ½ cup
  • Garlic Cloves (Minced) – One
  • Lemon Juice – One tbsp
  • Ground Pepper
  • Fresh Basil Leaves
  • Salt to taste

Procedure

  1. Heat water in a pot and add pasta. Cook it for a significant time, and then drain and refresh using cold water.
  2. Whisk mayonnaise, lemon juice, salt, pepper, and yogurt in a bowl to make a smooth mixture. Use it at the time of dressing.
  3. In a separate bowl, add pasta, bell peppers, cherry tomatoes, onion, carrot, onion, olives, and fresh basil. Pour the dressing to this mixture.
  4. Do garnishing using olives.

4. Broccoli, Chicken, and Charred Tomatoes Salad

Ingredients

  • Skinless and Boneless Chicken Breast - 450g
  • Broccoli Florets – Four Cups
  • Ground Pepper – One Tsp
  • Tomatoes – 450g
  • Lemon Juice – One Tsp
  • Virgin Olive Oil – Two tbsp
  • Chili Flakes – ½ Tsp
  • Salt to taste

Procedure

  1. Put chicken in a skillet and cover it with water. Let the chicken cook for 10 to 12 minutes.
  2. Transfer it to a chopping board and cut it into bite-size pieces.
  3. Blanch the broccoli and then add water in a separate pot and put it to boil.
  4. Add broccoli to that pot and cook it for 3 minutes. Later on, drain and then rinse it using cold water.
  5. Cut tomatoes in half and then remove their seeds.
  6. Heat a pan, brush olive oil on the tomatoes and place them in the pan having the cut side downward.
  7. Cook until they start to get charred. Now cut those the tomatoes into cubes.
  8. Add left out olive oil to the pan. Add salt, chili flakes, lemon juice, and pepper to the pan, and remove them from heat.
  9. In another big bowl, add chicken pieces, broccoli, and charred tomatoes. Pour the dressing onto them.

5. Moroccan Kidney Beans & Chickpea Salad

Ingredients

  • Boiled Kidney Beans – One Cup
  • Boiled Chickpea – One Cup
  • Green Chili – One
  • Finely Sliced Red Onion – One
  • Grated Carrot – One Cup
  • Garlic Clove (Minced) – One
  • Lemon Juice – Two Tsp
  • Virgin Olive Oil – ½ Cup
  • Cinnamon Powder – ½ Tsp
  • Cumin Powder – Two Tbsp
  • Fresh Mint Leaves (Chopped)
  • Fresh Coriander (Chopped)
  • Salt to taste

Procedure

  1. Sprinkle some salt on the garlic and then mince it.
  2. Whisk olive oil, cinnamon powder, salt, cumin powder, and lemon juice in a bowl. Add the minced garlic to it.
  3. In another separate bowl, add chickpea, carrot, kidney beans, green chili, onion, coriander, and mint. Pour the dressing on it.

The salad is being served at room temperature or cold.
